Guests are greeted by the restaurant’s custom Mexican linens, unique hand painted china made in Guadalajara and granite tables. Don Manuel’s cuisine is based on local, organic produce grown specifically for the restaurant and prepared using old world techniques in a modern setting.

A truly unique aspect of this Signature Restaurant at Capella Pedregal is its kitchen, “Su Cocina.” In the same spirit of an authentic Mexican kitchen, the doors of “Su Cocina” are always open to Don Manuel’s guests. From the hand painted tiles that decorate the vaulted ceiling to Chefs grinding the corn to make each tortilla, “Su Cocina” resembles a real Hacienda style kitchen in both design and atmosphere.

In the morning “Su Cocina” is transformed into a breakfast buffet representative of a Mexican market. The breakfast buffet features Mexican glass jars filled with freshly squeezed juices, breakfast pastries from the wood burning oven and a daily selection of specialties cooked to order.

Around noon “Su Cocina” is used to teach the traditional techniques and heritage of Mexican cuisine, complete with offerings of tequila and wine.

For dinner “Su Cocina” sets the stage as guests are invited into the kitchen for “Antojitos,” or small plates, before beginning their meal. A favorite place to meet and enjoy a cocktail, guests often gather together in “Su Cocina” before sitting down for dinner. Guests can choose to experience Don Manuel’s private dining room, a private booth, the patio overlooking the Pacific Ocean or a romantic dinner on the beach for two.
